Looking for new inspirations, Chef Abe Conlon of Fat Rice embarked on a search for the roots of the unique Portuguese-Asian fusion food of Macau, China.
With his upcoming October book release, Abe will share the background on one of the dishes from the book, and expand your understanding of Macanese food and how the most complex and delicious cuisines in the world came from the cohabitation and intermixing of the Portuguese and native flavors of Asia, India, Africa and Brazil.
Abe will share his perspectives and give a taste of one of the most beloved Macanese dishes—Tacho, a cozido (stew) of sorts, with Chinese cured meats, cabbage and puffed pork skins.
