The Even Tempered Kitchen: A Shift Toward Openness and Inclusivity

  • Morgan's On Fulton Basement 950 West Fulton Street Chicago, IL, 60607 United States (map)

At this year’s MAD food conference, one of the key questions they hoped to answer was: "What do we hope our kitchens will be like in the future?”

Undoubtedly, the world of food is interconnected through social, economic and moral issues, and as chefs are keenly aware of this new consciousness, they are looking for ways to make an impact in their own kitchens as well. From unmaking the cultures of machismo and misogyny, to handling the intense needs of the back of house while still having it be a pleasurable experience, chefs are seeking to find constructive ways of push their teams to new levels of greatness, without the anger.

Join Michael Gebert of Fooditor for a conversation on this issue with chef Iliana Regan (Elizabeth, Kitsune, and Bunny), restauranteur and somm Alpana Singh (Boarding House), chef Noah Sandoval (Oriole) and Charlie Trotter vet, chef Karen Shields (Smyth & The Loyalist).
